It’s no wonder that baked chicken recipes have become so popular. After all, it has a low fat content, is readily available and has a pleasant taste and a smooth texture when properly prepared.
Unfortunately, the very smooth texture of most supermarket chickens will be too insipid for most palates if the cook does not “spice it up” a bit. Fortunately, even simple condiments do wonders for the chicken. Since the taste options are unlimited, the chicken can be your “blank canvas” to create some culinary masterpieces with different flavors each time.
One of my favorite baked chicken comfort food recipes is my recipe for chicken pie. I currently have a dear friend who is seriously ill. I love seeing her face light up when I come in with my Chicken Pie. This is one of those wonderful “comfort foods” that tend to make you feel that everything is fine while you eat it. Fabulous on a cold day, preferably by the fireplace!
I do not like to use a lower crust. I like to top it off with a wonderful and easy puff cover called Bladerdeeg, which originated in the Netherlands. This recipe makes enough for two pies, I usually freeze half. Make sure to cut attractive “vents” at the top. I always make a little heart with some pieces of dough and put it in the middle before baking it. My friend Susie loves that part!
